Te is currently cooking up a delicious omelet for us to eat for dinner. I thought now would be a fine time to share a new recipe we came up with last night. This would've been called "fried apple slices" or something, except it came out more like

Crustless Apple Pie

3 apples (we used some lovely organic Galas) sliced thinly -- about 1/4" or 1/2 cm
6 tablespoons butter*
ground cinnamon to taste, about 1/4 tsp
ground nutmeg to taste, about 1/4 tsp

Melt the butter in a large skillet over medium heat. Sprinkle in spices, then add apple slices and stir to coat. Saute until apples are soft, about 15 minutes. Serves two people if they care enough about one another not to come to blows trying to scarf all the apples themselves.

Note that there is no sugar in this recipe! We were as surprised as you are, but this came out amazingly sweet without any added sugar. It's possible that a little might be necessary if you use, say, Granny Smiths, but then again, it might not.

The butter and spices, combined with the juice that cooks out of the apples, create a wonderful sauce very reminiscent of really good apple pie... making this an *awesome* craving-satisfier for those of you who can't have carbs and/or gluten.

*I usually use Fleischmann's margarine when baking for vegans, but I can't promise what the results would be in a recipe this simple. Also, margarine is really bad for you and you shouldn't be eating it *unless* you're vegan.

That sounds yummy. I never tried sauteing apples with butter, when I do something similar I tend to cook them in a bit of rum (and optional some raisins), which gives nice additional flavor. I'm probably partial to the apple/rum combination because the apple pie my mom used to make also aways had a bit of rum in the filling... :)

Your cooking posts always make me wish I had a kitchen instead of the school cafeteria. Mmm, food.

Decent g-f pie crust:

1½ c rice flour
½ c corn starch
½ c tapioca starch
½ c potato starch
1 c shortening
1 t salt
1 t bp
1 egg plus water 2/3 C
1 t vinegar

Make as normal crust

But this is frankly more trouble than it's worth unless you're very dedicated to flaky crusts.

Gotta try this one.

Ooooh. Damn, now I'm hungry. But, 1 - no apples in the house, 2 - not gonna cook so late at night. Guess I'll have to settle for dreaming about yummy apple cinnamon-y goodness. Curse you, Jack! ;)
